How to Build Your Wine Collection from Scratch (Even If You Know Nothing About Wine)

So you’ve invested in a stunning custom wine cellar — temperature-controlled, beautifully lit, artfully designed to store your growing collection. There’s just one question left: What exactly should you put in it?

For many new collectors, the hardest part isn’t building the cellar — it’s stocking it. With thousands of regions, varietals, and styles to choose from, the world of wine can feel vast and a little overwhelming.

But the truth is, you don’t need to be a seasoned connoisseur to build a wine cellar that’s sophisticated, expressive, and deeply personal.

“There is no actual number of bottles that constitute a collection as a cellar, so starting little by little is the most important thing,” says Hugo Arias, a Certified Sommelier and one of the experts at wine experience company Sommsation.

Whether you’re starting from zero or already have a few favorites in mind, here’s how to build a wine collection that reflects your palate, enhances your lifestyle, and impresses your guests. And for personalized guidance, our partners at Sommsation have you covered with world-class sommeliers and an expertly-curated wine selection to choose from.

1. Begin With Your Taste (Even if You’re Still Discovering It)

Forget what’s “supposed” to be in a proper cellar. The most meaningful collections start with what you love to drink. Do you enjoy bold, full-bodied reds or something lighter and earthier? Do you lean toward crisp whites, aged Burgundy, or something with bubbles?

“Start working on your cellar with the things that you like now and don’t be afraid to adjust as your preferences change,” recommends Arias.

If you’re not sure yet, that’s part of the adventure. A great first step is working with a wine expert or sommelier who can guide you through a curated tasting. They’ll help you identify the styles, textures, and regions that excite your palate.

“Learning about wine takes time, but nothing beats opening a bottle of wine and tasting it,” Arias says, adding, “Tasting is the best way to learn what you like — and having someone guide you can make the experience completely different and a lot more educational.”

2. Stock For the Life You Live (and the Occasions You Love)

A thoughtful wine cellar doesn’t just hold bottles. It supports the way you entertain, unwind, and celebrate. Think about the role wine plays in your life:

  • Do you host dinner parties with perfectly paired courses?
  • Love spontaneous toasts with friends?
  • Enjoy a glass with weeknight dinners or while watching the sunset?

Fill your cellar with wines that suit different moments. What would a sommelier start with? Arias suggests elegant reds like Pinot Noir, Gamay or Cabernet Franc for intimate dinners. Then, include some lively sparklers for celebrations. For casual evenings on the patio, you can try classic crisp whites such as Sauvignon Blanc and Pinot Grigio, but Arias also suggests unique wines such as Albariño from Spain or Chenin Blanc from South Africa. There are many options to explore!

A cellar built around your lifestyle ensures you always have the right bottle on hand, and you never feel stuck guessing what to open.

3. Build a Balanced Foundation

Start broad and build from there. A well-rounded cellar might include:

  • Sparkling wines – not just for celebrations, but also incredibly versatile with food
  • White wines – from zesty Sauvignon Blanc to rich, oaked Chardonnay
  • Rosé – dry, expressive, and ideal year-round
  • Red wines – covering a spectrum from light-bodied Pinot Noir to bold Cabernet Sauvignon
  • Dessert or fortified wines – such as Port, Sauternes, or Sherry, perfect for after-dinner pours

Imagine it’s like your base wardrobe: essentials you’ll reach for often, with room to layer in more trendy or special selections over time.

4. Explore Regions, Varietals, and Producers

One of the joys of building a cellar is the opportunity to travel the world through wine. Did you know there are over 10,000 different grape varieties planted around the world?

“Don’t box yourself into only three or four varieties,” urges Arias. “The wine world is big and exciting, and it deserves to be explored!”

Try exploring different:

  • Regions – France, Italy, Spain, Oregon, South Africa, Argentina
  • Varietals – from the familiar (Cabernet, Chardonnay) to the adventurous (Tannat, Grüner Veltliner)
  • Producers – find winemakers whose approach, philosophy, and story resonates with you

Don’t be afraid to venture beyond the classics. Some of the most interesting cellar additions are hidden gems from small, independent producers. Their wines may not be widely available, but their passion and precision shine through in every sip.

5. Create Space For Both Aging & Discovery

Some wines are meant to be enjoyed now. Others reward patience. As you stock your cellar, consider including a few age-worthy bottles. These evolve beautifully over time, adding a sense of anticipation and depth to your collection.

But just as important? Making room for exploration. Wine isn’t static — your tastes will change, new regions will pique your interest, and that’s exactly how it should be. A great cellar is a living collection, built to grow with you.

6. Work with a Trusted Guide

You don’t need to become a wine expert overnight. Whether you’re selecting a dozen bottles or mapping out a full cellar strategy, a trusted sommelier or wine advisor can help you make smart, satisfying decisions.

Many collectors begin by booking a tasting or consultation to explore what they enjoy and what’s worth investing in. It’s not about memorizing vintages or tasting notes. It’s about building confidence and curating a collection that reflects who you are.
